Method
- Put the onion, celery, fennel, pickling spice and half the vinegar together in a bowl and boil on HIGH for 20mins
- Add ginger, chilli, apple, tomatoes, sugar, remaining vinegar, salt and tomato puree. Boil on HIGH for 5 mins more
- Then simmer for 1hr
- Stir in vodka
- Store in sterilised jars
