Method

  1. Put the onion, celery, fennel, pickling spice and half the vinegar together in a bowl and boil on HIGH for 20mins
  2. Add ginger, chilli, apple, tomatoes, sugar, remaining vinegar, salt and tomato puree.  Boil on HIGH for 5 mins more
  3. Then simmer for 1hr
  4. Stir in vodka
  5. Store in sterilised jars

  • 2 large onion peeled and chopped
  • 1 head of celery diced
  • 1 small head of fennel diced
  • 1tsp pickling spices
  • 650ml pickling vinegar
  • 1” piece of root ginger peeled and chopped
  • 1 red chilli chopped
  • 450g cooking apples
  • 1kg ripe tomatoes
  • 350g Demerara sugar
  • 1tsp salt
  • 4tbsp tom puree
  • 3tbsp vodka
